Broccoli Soup & A New Product

Tonight I made "Creamy Broccoli Soup with Roasted Red Bell Pepper Creme" from the RFD cookbook. Yum Yum! It's a great (and easy!) recipe. I made a half recipe and that was more than enough for Musty, my aunt L, and myself. It's got 1 1/2 lbs of broccoli, and a cup and a half of packed spinach in it... really packed with healthy yumminess! Also, I used my homemade veggie broth, which helps keep the sodium down.

Here's the roasted bell pepper creme. I forgot to peel it after roasting it, and the sauce still came out great. The little black flecks are the charred bits from the skin. We've got quite a bit left over, so hopefully I'll find a use for it tomorrow or the next day.

Here's the finished soup, complete with a yummy dollop of the bell pepper creme. So pretty. (and red and green too... how christmassy!). See the big chunks of broccoli? Yum!

Last week, I picked up this naughty looking treat the store... I finally opened it up tonight and I really like it! Obviously, it's very sweet and dessert-y... and I think it's a fun tasty treat, especially warmed up. Musty doesn't like it, but he doesn't like peppermint (weirdo!). I recommend it for sure.

    I agree! That stuff is super yummy! I'm not sure about the soy nog, because I've never been into egg nog... but maybe I'll give it a try!!

    That Vitasoy, cold, is my crack. I brought a container into work a couple weeks ago and it made my days so much better, sneaking a mug (walking to the kitchen) here and there.

    Ooh, those broccoli chunks look so delicious! I'm not terribly crazy about roasted red pepper but I'd take a little swirl of it in that soup.

    I've tried the Vitasoy Holly Nog flavor, and it's quite yummy! I haven't tried the peppermint chocolate, and I may not get to since I can't find it anywhere closer than Atlanta (about 2 hours away)--but I'm glad to hear it's tasty too!

    I know what you mean about roasted red pepper... it's not really my all-time favorite flavor either, but somehow with the cashews and other ingredients this sauce is really great.

    I think I'll give the Holly Nog a try - I've never had real egg nog (too grossed out by the name) so I won't have any high expectations!
