I have recently finished recipe testing for Vegan Richa's new book and she has a yogurt recipe with an option to make your own yogurt starter using probiotic powder (or a capsule). I didn't try that version because I couldn't find any non-dairy probiotics (and I can get unsweetened coconut yogurt here).
