Sandwich & White Winter Soup

Today for lunch I made a great sandwich with some party leftovers: hazelnut hummus, bell peppers, some roasted butternut squash, scallions, lettuce, on roasted garlic sourdough. Yum!! I'll probably make something similar tomorrow. :)

Tonight for dinner my aunt & her boyfriend came over. They are both vegans, so it's extra fun to feed them! I made the "White Winter Soup" from Voluptuous Vegan. It was great & not very complicated at all! Also - extra exciting - I got to use celery root for the first time. I love meeting a new veggie! The soup also had a tasty roasted red pepper puree with it, which was delicious. Also my aunt brought over a big huge bowl of green beans.

Bonus photo! It's me snuggling my sweet little sleepy dog, Stevie Wonder. I love her so much. See her little bald belly? It's extra soft & cute, and she likes getting it petted - which works out great for all of us !

    The food looks great (and I love the fact that you have a vegan Aunt) but your last paragraph completely cracked me up. I couldn't stop laughing. I feel the same way about my dog. He has a very big belly (he's 86 pounds) and almost no fur at all on his entire belly. Marty says sometimes he feels like it's kind of creepy rubbing his belly because it feels a lot like human skin. Pets are so great! I would be so sad if I didn't have mine in my life.

    I think that sandwich sounds amazing--all that party food looked so good, and to put it all on a sandwich. Yum...

    It's awesome that there are other vegans in your family! I wish I had vegans (other than my husband) that I could cook for!

    What a wonderful looking bowl of soup. I recently flipped through voluptuous and completely overlooked that recipe, sadly.

    I'm also here to respond to your tvp question - I assume you can just hydrate those crazy chunks similar to the small ones - I think I've read about using them 'fried chicken' style, though I don't know how it would work. Good luck & I'm curious to see what happens!

    How fun that you have a bald-belly dog too! We call it Stevie's "pig belly" - it really does feel like person skin! I hadn't ever known a bald-belly dog before stevie, and I think it's really fun. :)

    Yeah, I've been enjoying Voluptuous Vegan lately. I've had it for years and only recently started using it. I really like it. Also, thanks for the TVP tip. I've gotta figure out something fun and special to use it for.
