Making Crepes

Yesterday morning I made some crepes for breakfast. I've blogged about crepes before, and I'll blog about them again! They are one of my most favorite foods ever. I eat mine with jam, a sprinkle of powdered sugar, and a squeeze of lemon. Musty likes them with maple syrup. When I was growing up, the most special thing was when my mom would make us crepes for breakfast. Her recipe was something like 1 cup of flour, 1 egg, and 1 cup of milk. From a very early age, I was proficient and making - and eating - my fair share of crepes!

When I went vegan, I thought it was all over for crepes and me. But then, "Vegan with a Vengance" was published... and I found myself a crepe recipe! For that alone, I am most grateful to Isa & her special cookbook. These days I've modified her original recipe... I went from 2 tablespoons of oil to 2 teaspoons. If you are fat-conscious you can even omit it altogether. I must admit that the more fat you add, there is noticably more flavor. So, do what you need to do.

I usually just use water for the liquid, but you can also use soy milk, or half-water half-soy milk. She suggests letting the batter sit, which i find to be most unhelpful. Crepe batter must be positively liquidy. In fact, I usually add another 2 Tablespoons or so of liquid. Whisk it all up like crazy and you're good to go. I also find absolutely no problems with stacking them all up, whereas she says they will all stick together - this has never happened for me.

So many fellow bloggers comment about how hard and discouraging it is to make crepes, and this just makes me sad. It is so easy! You must persist! It is worth it! To help these poor, crepe-less souls, and also just for the fun of it, Musty and I even made a little movie about making crepes - for your viewing pleasure. Even though I am horrified by the sound of my own voice ("do I really sound like that??") and even thought I am even more horrified by the appearance of my filthy post-homemade-vegetable-broth/post-homemade-apple-sauce stove top, I have decided to make this video available to the general public (that's you!):

  4. I have to admit, I'm definitely intimidated by making crepes; but your video makes it look so straight-forward (and even MORE delicious!!) - yum!! and hey, I think your voice sounds great - you should have a cooking show! :0D

    You are just too adorable for words! I know how you feel though about not liking your voice. I always want Marty to do my outoging voicemail message because I hate the thought of people hearing that. Ummm...kind of stupid considering I'll eventually be talking to them anyway.

    Great tutorial. I appreciated being able to see how thin the batter was. I think that'll help me with my next batch for sure!

    I love crepes too, and I do think a little fat is essential in them for flavor- have you ever tried making them with coconut milk? Mmmmm.

    I love crepes too. I just made the spelt flour crepe recipe in Eat, Drink, and Be Vegan by Dreena Burton, and it is fabulous. I'm so happy to have crepes again!

    Yes, you really do sound like that. It's the Amey we all know and love. But I can definitely relate: it is strange to hear yourself.

    Seems like the video has had its desired effect of giving confidence to many would-be crepers.
