Two Days of Fancy Eatin'

I was in the mood to bake, so I made these delicious Persimmon Bars with Lemon Glaze. I found this recipe and printed it out eons ago... just ran across it in my recipe folder. I used applesauce instead of most of the oil, and raisins instead of dates (my dog Dottie has discovered the joys of stealing food off the kitchen counter top... heavy sigh. thus, I found my dates out in the backyard... and switched to raisins). I brought these along to the Downtown Santa Cruz Christmas Parade. Such fun, even if it was freezing cold.

Last night's dinner: Paella, Tomato Sauce, and Tofu-Roasted Garlic Aioli from "Voluptuous Vegan." I am loving this cookbook. The Paella was so good - roasted cauliflower & chickpeas, roasted & marinated tempeh, veggies, and tomato-onion rice.... mmm! I used smoked paprika on the tempeh, and it was my first time using smoked paprika. Now I see what all the fuss is about. What a wonderful ingredient! The little tempeh nuggets alone were fantastic. The aioli is very good, and very strong, and makes a LOT more than you need. Make a half recipe... that's my suggestion.

I had a very special breakfast this morning! I drove over to see my super-special friend JJTWH, and we made brunch together. We both love to cook, and often trade recipes back and forth. Today we made the Pumpkin Waffles from VwaV, the Herb Roasted Potatoes from VwaV, and a fruity salad. Plus OJ & Decaf. mmm what a great time cooking and eating we had. The batter for the waffles was super thick, so I had to thin it down with a little water. Otherwise, no complaints! We had a great day together.

Tonight I made a big huge dish of delicious vegan lasagna - homemade tomato sauce, herbed tofu & olive mixture, veggie mix, and noodles. mmmmmmmmmmmm I love lasagna! I made this for my grandpa and my great aunt, and we had a very sweet dinner together. There was also butternut squash roasted in the oven, and a nice fresh salad. It is such a pleasure to cook for other people, especially when they enjoy the food! There was a lot leftover, so I think we're on for lasagna again tomorrow night. I just love spending time with those two. What a lucky gal I am!

  1. mmm, the Persimmon Bars sounds fabulous - especially with the Lemon Glaze!! I've never had persimmons before, but I'm quite intrigued by them. I always sub out the oil in recipes, so I'm glad to see that you did too :0)

    Ahh Paella - love it!! Never thought of serving it with tomato sauce OR aioli before... sounds worthy trying, for sure.

    How fun that you and JJTWH made brunch together!! The waffles and the fruit salad are calling my name :0)

    I too love lasagna, but I haven't eaten it in such a long time!! The gorgeous photograph of YOUR lasagna just reminded me that I need to make some. Oh and roasted butternut squash? pure bliss.

  4. The bars are such a pretty color and the recipe looks wonderful! I know you enjoyed your day of cooking with friends and family, especially when all the food turns out as good as yours did.

  10. There's so much beautiful food here! Those bars look and sound fantastic. I just had my first experience with persimmons--they're so great. I really want to explore some more--these seem like a great place to start. Thanks, as always, for such great inspiration.

  11. Mmmm, how I wish I was a little troll living in your kitchen, and I could steal little scraps of food! I promise I wouldn't drag the dates into the backyard, though...

    I never get around to cooking with persimmons, because they are so expensive here, and so good to just eat raw! One day, if I ever come into a glut of persimmons, I have this recipe bookmarked...
