tonight's dinner

I've been busy and teaching a lot lately, so we've had a bit more take-out and soup-from-a-can than I prefer. So, tonight, even though I got home at 7:30, I decided to make something nice. I made the Seitan Piccata from "Veganomicon." Supposedly this is a "45 minute" recipe, but that wasn't the case for me. Am I just slow? Plus, I like the way that she suggests serving it with mashed potatoes, but doesn't include that in the ingredients! Be warned!

Those minor gripes aside, this dinner was really freaking tasty! I made a few minor changes - I added black pepper and onion powder to the flour for breading, and I reduced the lemon juice from 3 Tbsp to 2. Musty thought it was still a bit too lemony. But, I loved it. He's lemon-sensitive like that. Also, instead of mashed potatoes, I made blitva s krumpirom. YUM.

Check out our dessert! When I was a little girl, I used to love it when I could talk my mom into buying the special chocolate sauce to make banana pops. It was a great product, called (really!) "Make 12 Banana Pops." Ha! I had some leftover chocolate ganache, so I thought of making these. The chocolate ganache didn't harden the way the original stuff did, but damn, these were great! And fun. I call them Chocky Nanners. If you wanted the real crunch, I guess all it would take would be to use melted chocolate chips, rather than ganache. But it's a perfectly fun way to use up some left over ganache.

    I always take way longer than the v-con estimated times. I think they assume you've already prepped all your ingredients or Isa is super fast or something.

  2. I'm slow with recipes too! The times are reported by the testers & averaged out, I believe.

  4. No worries!! I ALWAYS take a long time with preparing meals. If I had a show like Rachael Ray's "30 Minute Meals," mine would probably be called "2 hour meals" haha ;0)

    Did you save any leftovers??? I'll have some, please! :0D

    Oh, that looks very good!

    Yeah, I add on a bunch of time for most recipes that require chopping of vegetables. I am very slow with the knife, and would never make it working at a restaurant. But then again I do still have all of my fingers :-) jen e.

  6. I think I usually take about 1.5 times as long to make a dish than what the recipe says... Sometimes I wonder if the times are based after everything is chopped & ready to assemble! And then sometimes I realize that I am just slow...

    I haven't made that seitan dish yet, but it sure looks tasty! And how funny is that name--"Make 12 Banana Pops"?! Doesn't sound like they spent too long coming up with that... :) That banana really does look delicious, though!

  7. The piccata looks great; that's been on my "must try" list for a while now. I don't even look at the suggested time frame for recipes anymore because they're never accurate for me either!

  9. I actually just saw chocolate covered bananas in the grocery store frozen health food section tonight and was tempted to buy them but went for a soy "ice cream" bars instead. I'll have to try the bananas next time.
