VeganMoFo: Hungarian Eggplant Paprikash

Way back when I decided to do "Around the World in 30 Days" for VeganMoFo, and I announced my plan to Mr. Vegan Eats & Treats... he had one thing to say:
"Make Hungarian Food!!!"
So, dear friends, today's feast finds us in Hungary!

I like Hungarian food just fine, but Mr. Vegan Eats & Treats just can't get enough. Seriously, it drives him crazy with joy and appreciation. Also, I like eggplant most of the time, but Mr. VE&T is positively nutso for the stuff. Plus, I had received some very pretty little eggplant gifts, and wanted to put them to good use. So, in my search for appealing (and international!) eggplant recipes, I pretty much knew I'd found the winner when I came upon Susan V.'s Eggplant Paprikash recipe.

This dish was really, really excellent. I loved Susan's quick and tasty homemade sour cream and it added so much to the final dish. The whole thing came together easily and quickly... probably 30 minutes from start to finish. Such a nice treat to have so much flavor and substance without so much fuss! Plus, the bell peppers at the farmer's market have just been amazing, and I'm always happy for more red and yellow peppers in my meals! Yummmmmms! I'm pretty much 100% that this dish will go into regular rotation for us.

  1. YUM! My husband's mother is Hungarian and he loves the food. He's an omni but just last night he made me a vegan Szekely Goulash for dinner. So good! And now I must share your dish with him! YUM!

  2. I'm going to have to bring eggplant something or other to the next potluck at your house! (Maybe not the gingerbread potluck.) Because I'm crazy for eggplants too, and it's always nice to meet someone who feels the same way.

Vegan Eats & Treats looooves him some Hungarian foodz - and how can he not with such deliciousness as this?!?! i love Susan V.'s recipes although it's been a while since i've made anything from her site. a delicious eggplant dish with rock'n homemade sour cream sounds like my kinda yum, too! you say this dish is gonna be a regular, that mean it must be gloriously good - and i'm gonna give it a go, too!

  4. Paprikás is such a great dish. The combination of paprika and cream is just perfect. I never made it with eggplant. Thank you for recommending this recipe.

  6. Oooh, eggplant paprikash, never even thought of that! I always make Urban Vegan's chickpea paprikash and its a huge, comfort food hit. But I could never give up another chance to use eggplant... Looks delish!

    That looks fabulous! I remember reading the recipe and thinking that eggplant and paprika seemed a little old but seeing your raves, I am going to have to try it next time I have eggplant.

    I have been meaning to try Susan's recipe. I have never been a big eggplant fan, but I think that's because I never knew how to cook it properly. I made a Chinese-style eggplant recipe based off one of Susan's other recipes and it was actually very tasty. I'll have to try this one next time. I am glad you enjoyed it!
