A Late Afternoon Potluck

My awesome friend Sophia hosted a spur-of-the-moment potluck this afternoon. It was a perfect sunny day, and a super fun chance to be together with friends. Plus, all often are really good cooks!

Sophia and her boyfriend Max made some great little mini sliders. I've heard of sliders before on the Internet, but I'd never had them before. Sophia and Max went ALL out on theirs - homemade whole grain sourdough buns, delicious homemade burger patties, and two different toppings: half had cooked mushrooms and cheeze and the other half had thin slices of roasted chiogga beets and sprouts. They were both magical!

Max also made some super beautiful Tequila Sunrise drinks, or for non-drinkers like me, San Pellegrino Sunrises. I've never had one before but I loved how yummy it was and how beautiful it was!

Nikki made some sweet and sour soup with mushrooms and tofu..... Which everyone loved, except I'm not really that in to mushrooms. I gave it a little taste just to be a part of the gang!

Josh brought some dry fried tofu with spice rub in a Dr. Pepper reduction sauce! Crazy innovative and really good too. Who even thinks of something like that?

... and be brought some homemade flat breads to go with it!

Matthew showed up with a totally cool pizza - sauerkraut and olives and tomato sauce. Friends, it might sound crazy, but it was delicious and it was the very first thing to disappear. Turns out that sauerkraut and pizza go great together! I truly never would have thought of that, but I'm so glad to be in on the secret.

As for me, I made a giant salad. I made it extra giant, too: mixed greens, cucumber, carrots, red cabbage, Rees onion, kalamata olives, sunflower sprouts, avocado, hemp seeds, cauliflower, and probably a few other things I'm forgetting! It was so good!

Here's my plate stacked full of goodies!

I forgot to take pictures of dessert (Sophia's super tasty mini cupcakes and Nikki's coconut peanut butter cookies) - but I didn't forget to take a picture of Gertie hiding in a box! So, that will have to serve as dessert for you!
