Pancake Love


Somedays, a special breakfast really hits the spot. Usually I have a piece of toast or a little bowl of cereal, a cup of coffee, and then I hit the road running. But every once in a while, the fates offer up a quiet morning with no big plans, no obligations, no tempting invitations. Ah.

I made us a batch of Perfectly Puffy Pancakes, from Isa Does It, and they were truly perfect!! We loved them so much. I also made a double batch of the breakfast sausages from Vegan Diner. I love that recipe, and now I'll have a bunch of delicious, high-protein snack nuggets in the freezer just waiting for me. Plus, the requisite breakfast fruit, and a big cuppa joe (just hiding in the corner of the picture). 


Perfect day, commence!

  2. Pancakes are awesome. They are also the first vegan thing I ever cooked myself and tasted just as brilliant despite different ingredients. I guess batter's batter whatever it is made from. I think I used recipe from Colleen Patrick-Goudreau's The Joy Of Vegan Baking.
