I call them Crescents. Start with cooked whole millet and then add raisins, walnuts, grated carrots, grated fresh ginger, and cinnamon. In a blender purée an apple with soaked flax seeds. Mix together and use an ice cream scoop to get uniform portions. Roll into a ball and then place them on parchment paper on a cookie sheet. Once on the cookie sheet shape them into crescents. Bake at 350 for 30 minutes and let cool before storing them in a tightly sealed Tupperware container in the refrigerator. Before serving, toast them in a toaster oven. Between the distinctive flavor of the ginger and the sweetness of the raisins and the unexpected crunch after toasting—it’s fantastic!
