How long can I go on reading everyone else's veggie blogs and not contribute one of my own?! Here are the last two days' worth of eating...
Made this two nights ago... Veggie Summer Vegetable Stew (from the "Vegan Mediterranean Kitchen"). What a great recipe! Eggplant, tomatoes, zukes, onion, garlic, red & green bell peppers... and I'm sure there's more that I've already forgotten. Super yum!
With the stew we had polenta with fresh corn & rosemary and some great local melon. Two of the polenta wedges I fried up in a bit of olive oil, and I left the other two as is. By the way, that is my boyfriend's Kraft Parmesan cheese... mine is the Rawmesan.
Yesterday's lunch: I made the great White Bean Pesto from over at Fat Free Vegan (which is totally amazing!), and used it as a spread in my veggie wrap. First, I took a delicious Indian Life Tortilla, spread on a bunch of the pesto, and then chopped up some cherry tomatoes & bell pepper & lettuce. So insanely delicious... except the garlic in the pesto made me need a sweetie afterward (not such a big problem, really!)
Tonight's dinner: the AMAZING Potato & Green Bean Salad from "Vegan Mediterranean Kitchen". One of our real favorites.
I braised up two bunches of collards to go along with the potato salad. I'm nuts for collards.
That's all for now... I forgot to go to the farmer's market today, sadly. But I've got a bit supply of fresh organic tomatoes just waiting to be eatin' up!
I love collards too. I can never get enough of them. I usually overdo it on the collard planting in my garden, but I am never really sorry to have an excess. The collard & potato salad combo looks great!
ReplyDeleteIt's a good idea to grow collards... maybe this winter now that I've got a little veggie patch in the front yard. The only trouble is that everything's gotta go in a gopher basket. maybe it's time to finally put in a raised bed with gopher wire on the bottom? sigh!
