Tonight I made two (count 'em - two!) patty recipes. I made the Split Pea Patties which I tried a while back, and also some Onion Bahjis. The two little golden patties in the front are the Split Pea Patties, and the slightly darker patty in the back is one of the onion bahjis. We've got a lot left over, so looks like we'll be eating patties 'til we pop!
The first time I made the Split Pea Patties, I followed the recipe, which turned out not to be a good idea. .... The taste was good, but they were way, way too moist. So, this time I tweaked it a bit and ended up with something much better! These tasty patties are essentially little split pea soup patties - quite nice! Here's my modified recipe:
1 c split peas
1 bay leaf
1 medium potato
2 T chopped celery leaves
1 carrot, grated
2 cloves of garlic, minced
1 small onion, finely chopped
1 t fresh marjoram or oregano, finely chopped
1/4 t dried thyme (or 1/2 t fresh thyme)
1 T parseley, finely chopped
1/2 t salt
1/4 t pepper
1/8 t nutmeg
1/3 c whole wheat pastry flour (or regular)
oil for spraying the baking sheet
Put some water in a medium-large pot, and get it boiling. While the water is warming, peel your potato & cut it into 2-3 big chunks. Put the peas, bay leaf, and potato into the boiling water and boil for 30 minutes (or until both the split peas and the potatos are very tender).
Meanwhile, chop up all the other veggies, and get everything measured out and ready to go. Preheat the oven to 350 F.
Once the peas and potatoes are ready, reserve about 1/4 c of the cooking water and drain out the rest. Discard the bay leaf. Pour the peas & potatoes into a sizeable bowl and mash them up together. Add all the other ingredients (except the oil), and mix well. Add in the reserved cooking water. Spray or lightly brush a large baking sheet with some olive oil, and start making some patties. I made mine about the size of little hamburgers, about 1/2 inch thick or so. Place in the oven and bake for 15 minutes. Flip them over, and bake another 15 minutes (they may be a bit moist... so just be delicate). Flip them once again, and cook 5 more minutes.
Eat & enjoy! (Makes 12 patties -phew! We got alotta pea patties!)
I got this recipe off someone's website so long ago, and I don't know whose it was... maybe vegan lunch box? Apparently it's from Jamie Oliver on the Food Network.
1 large red onion, cut in half and cut into thin-ish slices
2 carrots, grated
4 scallions, chopped (white & most of green)
1/2 bunch cilantro, chopped
1 c flour (i used 1/2 wwpf & 1/2 regular)
1 c chickpea flour
2 t black mustard seeds
2 t cumin
1 t chili powder
1 t turmeric
1/2 t salt
1 1/3 c water
Put the flour, chickpea flour, and spices in a bowl. Whisk together to get out any lumps. Add the water, and mix well. Add all the veggies in. You will find it messy but most effective to use your hands to mix it all together. Fun!
Heat a large skillet over medium heat. Spray or brush lightly with a little oil, and then scoop on a few globs of batter, spread them out so that they are about 1/2 inch thick (not thicker)... and about hamburger size or so. Cook until golden brown on the bottom, flip over and cook the other side.
Made about 10-12 patties. Serve with chutney or enjoy on their own. These are also really good toasted the next day, and i think they would make a nice brunch item. I think they need a little salt on top, but I guess I like a little bit of salt.
