Quick Dinner & Skillet Corn Bread

I had such a super fun day... I just couldn't stop having fun, and ended up doing my grocery shopping for dinner at 8:30 at night! oops! We were both so hungry, and so I was looking for something quick and easy at the store. I found some "Field Roast" on sale, which seemed like a good place to start. I thought it was "celebration roast" - which I LOVE... but once I cut it open to start cooking it, I realized it was a different variety. It turned out to be "sundried tomato" flavor. It was good, but much drier than the Celebration Roast unfortunately. Musty says it tasted exactly like "Slim Jim" beef jerky ... he declared "we're having beef jerky for dinner!" with a mix of joy and dismay. Ha ha. Not my best meal. That's what I get for desperately cooking dinner at 9:30 pm. I also made some cabbage and brussel sprouts.
The big success of the evening (thank goodness there was one!) was this ** amazing ** "Southern-Style Corn Bread" from the Real Food Daily cookbook. I really love this cookbook, and I just made this for the first time. It was SO great! I made a half recipe and cooked it up in my smaller-sized skillet. Thank goodness, because it seems like the full recipe would feed 20 people! This cornbread was very easy and is really deliciously tasty. Yum. I had two wedges... :)

  2. Oooh, sorry about the field roast incident! I could easily make a meal out of the veggies and the delicious looking cornbread, though! I don't know what it is, but I love skillet cornbread more than any other kind. I don't buy many cookbooks (I don't even own VwaV!) but I've always eyed the Real Food Daily book, because the recipes look so magnificent.

  6. I love cornbread! And I love RFD! I've wanted the cookbook ever since I went to the restaurant last year - it was fabulous. I really need to get a cast iron skillet so I can make some cornbread like this - yum!
