A Few Spur-of-the-ingredients Creations

Last night I made whole wheat spaghetti with some caramelized onions and greens. I had a vision, but it didn't end up being very tasty. It was heavily dependent on salt for flavor. Oh well! At least it was healthy. It looks better than it actually was, so I will spare you the unsuccessful recipe.

mm-mmm-mmm! Here was today's fast & delicious lunch! I stir fried up some diced butternut squash with some cumin, then added half a can of kidney beans and some left over white rice. I tossed in some water and cooked until the squash was completely tender. Then I added in the juice of half a life, about 1/4 c fresh salsa, and a handful of chopped cilantro. Yum yum yum! Try it! It's delicious and speedy.

I am too lazy to rotate this picture! Ha ha. I've been really enjoying the fruit smoothies lately. This one had some mango/apple juice, some frozen peaches, strawberries, ollaliberries, and bananas. Plus, a scoop of the cool Omega 3 stuff I got from vegan essentials. Yum!

Tonight for dinner I cooked up a quick and veggie-ful quinoa salad. It's got quinoa (obviously!), steamed carrots, steamed chiogga beets, frozen peas and carrots (boiled), toasted almond slivers, fresh tomatoes, and cilantro. Plus a lime-cumin-coriander-scallion-cilantro dressing. Very tasty & nice to see such a colorful meal. I love the one-plate meals.

  2. Everything looks great, especially the butternut squash lunch, but the sideways photo of your smoothie is giving me a headache. I keep expecting it to spill! LOL

  6. Your smoothie makes me giggle- but also makes me tempted! Like scottishvegan, I've never heard of an ollaliberry-how cool!

    As always, I love the look of all your meals-I think we'd have a lot of fun cooking together.

  7. I'm sorry it took me so long to get over here. All these foods look so tasty! I would totally eat everything. I love recipes with lots of veggies thrown in, so colorful and flavorful.

  8. Oh, I love quinoa!. That salad looks so yummy. Sorry your speghetti dish did not turn out. I hate that when you mind and mouth are creating a new dish and the results are less that wonderful. I have had to toss many simple because they were to bad to eat. It sure looks good though!

  9. What a wonderful array of food in your recent posts! I'm sorry the spaghetti didn't turn out like you hoped--I'm imagining that it was as delicious as it looks! I'm impressed with--and slightly jealous of--the farmer's market findings you showed in the last post. I need to go hunting for farmer's market produce soon!
