Foodie Food Food!

Let's see... a couple of days ago, I had some stale bread and a hankering for some Fronch Toast (ala VwaV). Oh yeah! This stuff is SOOOOOO good. Thank you Isa!! French Toast used to be one of my most favorite breakfast foods, and I thought I'd have to live without it as a vegan. I eat mine with homemade raspberry jam. Yumola.


Here's a Giant Salad that I had for dinner a couple of nights ago... so many goodies - raw beets, carrots, kidney beans, red cabbage, tomatoes, celery, walnuts, fresh basil, tofu ricotta, hemp seeds, and lettuce! I love the tofu ricotta in the salad so much... especially after I take the picture and get to mix it all together.


Last night my cutie nephew CW spent the night. I had a hard time fixing a dinner that he liked (sigh!)... but I hit a homerun with breakfast - pancakes!! I usually make more "hippy-style" pancakes, but CW isn't used to hippie food at all (thus the dinner problem)... so for the pancakes I just used the recipe for "basic pancakes" from the Joy Of Cooking. I used half whole wheat pastry flour, and used egg replacer instead of eggs. They were fluffy and amazing!


Here you can see Musty and CW enjoying the pancakes - as you can see, they were a big hit!! We also had apple juice and fresh strawberries.


Tonight I made a delicious pot of veggie-licious chili: spicy and full of veggies. I just basically made it up... and I was very pleased with the results. It's got onions, garlic, chopped carrots, red bell pepper, green bell pepper, 1 big can of diced tomatoes, 2 cans of "chili beans," and loads of cardamom, chili powder, and cayenne. Plus some cilantro... mmmm!

    You know, I've never made vegan French toast. I think I should try it soon... yours looks so excellent.

  5. French toast was one of my favorite non-vegan breakfast treats as well, and I'm so glad it can be just as special--even more so--without the icky eggs! I like the recipe in VLV more than the VWaV, but each to his own, right?

    Your salads always start my mouth watering, and I think this one might top them all!

  10. Breakfast has always been my favorite meal of the day, and I was worried when I went vegan that I would miss out on the old stand-by's. I've made french toast once in the past 2 years, and it wasn't that great. I need to try that recipe, because everyone always raves about it. Between the pancakes and the french toast (and everything else!), you're making me salivate!
