Merry Christmas! & I'm off!

Merry Christmas Everyone! I hope you had a nice holiday!

We had a great dinner last night. I usually do a lot of cooking for family festivities, but since I am getting ready to leave tomorrow morning for India, my family covered for me. This is my delicious plate of food! My aunt Laura made some scrumptious green enchiladas (bottom,... it sorta got ripped up), there was some delicious vegan stuffing (thanks mom!), mashed potatoes, cranberry sauce (not pictured), roasted brussel sprouts, & roasted butternut squash. YUM.

I did make dessert, although I didn't photograph it. I made the delicious, quick, and gorgeous Cranberry-Orange Tart from Voluptuous Vegan. It was a big hit.

This morning we gathered at my mom's house for a nice waffle breakfast... this has become a little mini-tradition for my mom & dad & Musty & me. This year my aunt Laura and my grandpa came too, and everyone was totally down with having the waffles be vegan and using Earth Balance instead of butter. How cool! After the waffles, my brother & his family came over & we opened a fun and modest little selection of gifts. Speaking of which...

Check out what my mom got me! A brand-new family-sized waffle iron at the thrift store for only $3.25!!! Score! Thanks mom! We used it, alongside her old trustworthy one, this morning and it works perfectly. I'm psyched. I have a little mini, one-person waffle iron and it's just such slow going trying to make waffles for musty and myself with that little guy. Now, with this bigger one I'll definitely be more interested in waffle making. FUN!

Well, tomorrow at 4 am I'm off for 5 1/2 weeks in India. I'll be studying yoga at the Iyengar Institute in Pune. I'll be blogging here about my foodie adventures, whenever possible.... but I'll be keeping a more general blog about my trip here:

    We got your cookbook and I've already made two things from it: Tofu Ricotta and Star Anise Glazed Tempeh. Russell LOVVVEEEDD the tempeh, which is saying a lot because the whole time I was thinking it'd be too sweet for his tastes. Absolutely adored it, still talking about it. :-)

    One of my New Year Resolutions is to become a real yogi! More than just a little dabbing of yoga here and there, but a full-time, daily yoga practicer. I'd love to follow in your footsteps and teach someday! You're one of my role models :-D
