5 Savory Meals

5 Recent Meals, all well-received:

Tempeh and Collard Greens with Garlic from the "Real Food Daily Cookbook." Made for a big family dinner and it was a big hit. Eaten up to the last bite. Used collards from my grandpa's ever-abundant garden.

Risotto with Peas and Basil, Italian Carrots with fresh parsley and oregano, roasted asparagus. The risotto and carrots were both from Donna Klein's book "Vegan Italiano." I've owned it for a while but this was my first time breaking it open. Both good, but I must say, the carrots were especially delicious. Musty says "lots of flavor."

Not attractive. I was skeptical from the get-go. But Erik Marcus over at chose this Plantain Omelet as one of 2008's top recipes. So I gave it a go. My oh my. It was freaking great! I used less cashew cream filling than recommended, just as a way of cutting down on the fat. Wonderful, rich flavors... totally new and unexpected. And not that hard. Also majorly filling. I made two gigantic omelets, but we ended up each eating half and eating the other half for lunch the next day.

Roasted Corn Soup from "Voluptuous Vegan." Delicious! Colorful! 100% local! Right on!

To go with the soup: "Salisbury Seitan" also from Real Food. First I made the RFD Chicken Seitan, which I love. Then I stumbled across this never-before-tried recipe. It's a big hit! The marinade is fast and rich, and once you've made your seitan and marinated it, the whole thing only cooks for 15 minutes in the oven. Fast, robust flavor, high protein, good texture. Yum.

    I haven't tried the RFD seitan yet, but I'm a sucker in the cold months for their tempeh loaf, so I imagine they know how to do the proteins up.

    All the apricots from your previous post are taunting me...I knew I should have gotten apricots at the market yesterday but the plums looked so perfect!

  3. oh my goodness - everything looks absolutely amazing! i still don't own the Real Food Daily - i need to get that cookbook! and the plantain omelet looks sooooooo good, the rissoto looks awesome, too! :D mmmmmmmmmmmmm!

  4. Oh my goodness!! I want to eat off this page - everything looks SCRUMPTIOUS! Mmmm, that plantain omelet looks divine, i must make them someday!! And oh, the Salisbury Seitan ... yum yum yum! Can I come over?! :0)

  5. Looks great! I'll be trying the collards and tempeh quite soon, but will probably sub kale since that's what we get in our cropshare.

    I also love the chicken seitan (just made the tacos from RFD...still need to post on that), but I've never tried the salisbury seitan.

    Looks delicious! And everything totally puts my last couple of meals to shame... I've been too busy to really cook, so the staples of my diet have pretty much been pastries and cold cereal!
