VeganMoFo: Happy Birthday Mom!

Tomorrow is my mom's birthday. She's a busy lady, so she's got a meeting tomorrow night... so we all got together and celebrated tonight. Of course I made a cake!

Truth be told, it wasn't my most successful cake ever, a bit too moist and dense... but we all managed to enjoy it, and the decoration turned out pretty cute.

Here's an ode to my mom, related to the topic of veg*nism. Sometime around age 14, I decided I wanted to be a vegetarian. My mom already cooked mostly all vegetarian food, and once I was a vegetarian, she made sure I had good food to eat. Growing up, I learned a lot about healthy choices and veggie appreciation from the good habits my mom set. Nowadays, my mom is one of my biggest fans - she's always pitching my blog to people and telling them what a great cook I am. Hee hee. Happy Birthday Mom!
