Three Great Autumn Meals

"White Bean Soup with Spinach & Rosemary"

Delicious, creamy white beans in a flavorful broth full of garlic and rosemary. I used a combination of spinach and beet greens. I followed the suggestion to make this soup in the pressure cooker, which was fast and easy. This soup is hearty and filling and nutritious, and tasty!! Plus, it made an awful lot (serves 6?), so I got to have it for lunch for a few days too.

One of my favorite meals that I've had in a long time. I can't quite stop thinking about this dinner, and I'm sure I'll make it again soon. Musty doesn't like sweet potatoes (crazy!), so I used a red kiri squash instead. There's a jalepeno with seeds in here, so it's got a nice heat punch... which I especially enjoy in the winter time. He suggests serving it with rice, which was a great touch. It's a great version of the classic winter-squash-coconut milk-ginger & garlic combo... with loads of collards added in. Totally delicious.

Spicy! Veggies! Beans! This stew was a big hit with Musty (oh, and with me!). Like all the recipes I've tried from this book, this dinner came together quickly, but had a variety and complexity of flavors that tasted like it had been cooking for much longer. The chipotle chile really kicked up the heat, but it wasn't at all unbearable. Just made us both blow our nose! I also appreciated the combination of beans and veggies, so that it's a complete meal all at once.

  5. YUM! The first soup reminds me of The escarole and bean soup I make. Only with a different twist. Yummy, Yummy, Yum, YUM!
