While The Cat's Away...

...the Mouse Will Eat Health Food!

Welcome to "3 Posts in 1 Day Day!" Part 3!:

Recently, Mr. Vegan Eats & Treats went away on a trip. I decided to use this time to try to make a dent in my overly stuffed freezer (exhibit A) and in my pantry, which possessed a number of random impulse purchases needing to be eaten (exhibit B).

A few years ago, I started getting more and more healthy with my cooking, and poor Mr. Vegan Eats & Treats uttered this now-famous plea: "Can we please have something with a little more FAT in it?" ha! Mr. VE&T will eat just about anything, so, when he's around, I have this lingering fear that if he doesn't like dinner, he will run out and buy a bunch of beanies and weenies, or boxes of mac and cheese - and eat that instead. In order to prolong his health (and lifespan), and in order to protect the animals, it is in my interest to make sure dinner is pretty tasty.

In his absence, however, I am happy to cook up a big pot of giant beans in the crock pot, and eat it for lunch. Lunch and dinner.

Well, the other thing about Mr. VE&T, is that he will not eat leftovers. This is crazy and crazy-making! So I celebrated his absence by making a giant pot of dal (using lentils from the pantry!), and eating it for days on end. Lunch and dinner.

I also made a huge batch of Kittee's Peanut Butter Granola, which I love. Mmmm. In fact, now I am all out, and suffering. I need to make more, pronto!

One night I made a half-batch of the delicious omlettes from Vegan Brunch, and used some KooKoo Sabzi filling - defrosted from the freezer, and left over from Persian New Year a few months back. One for dinner, and one for lunch the next day. VERY GOOD. And of course, lots of kale. Mr VE&T doesn't much like kale, so there was a lot of kale eating while he was gone.

The only hitch in my plan? Well, I can only eat so much on my own. Then, Mr VE&T came home two weeks early... and I hadn't made much of a dent in my freezer OR my pantry. Well, now the challenge is mine to continue on with freezer- and pantry-emptying project while still managing to keep him out of the Mac & Cheese aisle at the grocery store! Wish me luck!   1. Everything looks really good to me. I eat like you do when I'm on my own, except I'm probably too lazy to make the omlette!

  2. It all looks delicious! And the HH is the same way--no leftovers! What's up with that? I think so many foods (dals especially) actually taste BETTER the next day!

    Well, I get so many ideas from your posts because we eat very similarly in terms of the healthy foods. But I always have to remind myself that it seems pretty extremely healthy to most people. I mean that giant pile of kale in the omelette picture is way more exciting to me than a picture of a cupcake, which most people would find crazy!

    Good luck with the pantry/freezer clearing. I am looking at that right now too, so that there will be more room to freeze fruit at the end of the season. I have seen a couple of blogs where people list ingredients they want to use up and readers can post ideas. Not that you need any help figuring out what to do, but it is really fun to help out with a puzzle.

  5. yo girl! three posts in three days is great. i love all the amey i can get. i made more granola today, but can you guess what kind of fruit i added? you will have to guess, i am not gonna tell you. i am mcdougalling this month, until we jet off. it is a good little period of time for me to eat more healthily, and i am enjoying all the brown rice i get to eat, since i usualy eschew starches as much as possible. mama herbivore just told me about an artisan XgfX bakery that just opened a store front in PDX, you know i am excited. i found two dogs on petinder the other day, supposedly half standard poodle and half airdale. they are sisters and look just like vee, but just a smidge bigger. one is golden and one is white, and we are thinking we might meet them, since we are making a stop in boise. they are cute girls!!!!

  6. My pantry and freezer are just as bad if not worse! I need John to go on a trip so I can do some cleaning out too. But I know you're happy to have Mr. VE&T home!

    Good that your mister came home early though, right? I can't believe he doesn't eat leftovers though. Leftovers are the basis of my existance.
