VeganMoFo 13: Two People, Two Dinners

Tonight is the last official night of Week of Mr. Vegan Eats & Treats! Tuesdays and Wednesdays I teach late, and don't usually make it home until around 9:00. Sometimes I cook dinner, but a lot of times we'll just have take out or leftovers on these nights. Today I told Mr. VE&Ts that we could have any take out - his choice!

Well, when I got home, he said "I got something special for you, will you make something special for me?" Deal! So, look what I got:

!!! a beautiful vegan pizza from Engers Pizza. Engers is a great local spot that makes wood-fired pizzas and they are super super vegan friendly. In addition to having a special tofu-tomato vegan pizza topping, they have tofutti cuties in their ice cream freezer, and they have vegan soups. Plus, they have a ping pong table, which is fun. Mr. VE&Ts keeps a little memo on the computer with all the details about how I like my vegan pizza. What a sweetie pie! My toppings are: Spinach x2 ('cuz i like spinach!), red onions, peppers, black olives, roasted garlic, and fresh tomatoes. Mmmmmm. Yeah, I ate the whole thing. I have no shame. Also, I have no regrets.

Meanwhile, in exchange, Mr. VE&Ts requested two peanut butter & jelly sandwiches for his dinner. See, he had the leftover spaghetti from last night as a "late lunch," and then wasn't really in the mood for pizza... Mr. VE&Ts really loves PB&J, and he has particular requirements:

1. bread must be lightly toasted
2. jelly must be grape jelly. no substitutes allowed!
3. amounts of jelly & peanut butter must be "goopy" but "not messy"

Along with a sliced apple off the tree, he was very content with his dinner... and I was happy with mine!
