¡Llapingachos! ¡Llapingachos! ¡Llapingachos! My new favorite word. It is so fun to say. And, it turns out, also very fun to eat. For our meal from the fine cuisine of Ecuador, we had llapingachos... fried up mashed potato cakes served with a savory peanut sauce. Very yummy! The little cakes have onion and flour and baking powder, so they are definitely lighter than a straight up glob of mashed potatoes would be.
As you know, I am afraid of deep frying... so I just pan fried these starchy beauties, and they were definitely perfectly delicious this way. In order to add a little protein and a splash of color to our meal, I also cooked up some Latin Tofu and broccoli. Both the tofu and the llapingachos recipes are from Viva Vegan. I promise that this whole month will not be from Viva Vegan, but I think you might have to tough it out for one or two more days. :)
I dare you to make this recipe and not run around the house yelling "¡Llapingachos! ¡Llapingachos!" for the rest of the week. It happened to me.
