I had some supplies left over from my Easter quiche: some of the tofu filling that didn't fit in the pie crust, and some asparagus tips that didn't make it on top either. Plus, there were a few bagels left over from brunch too. So... in need of an easy packed lunch on my busy Wednesday - I toasted a bagel from the freezer, used the tofu filling as a bagel spread, and arranged my little asparagus pieces on top. This was so super yums! It's rad how the tofu mix is just as delicious baked in a quiche as it is raw on a bagel. It was full of leeks and sliced asparagus and all-round savory joy... and would be worth making a batch just to use as a spread!

Easter Leftovers Turned Into Magic
