Thursday is Mr. Vegan Eats & Treats' Birthday - so as part of his celebration, he gets to pick out all our dinners this week. Mr. VE&T isn't vegan, but he is certainly an enthusiast of all things yummy - so he'd been having a fun time reviewing his favorite meals and picking some out for this week.
There wasn't much hesitation about what last night's meal would be: Tofu Watercress Salad. This is a recipe from Healthy Hedonist, and it's really great. Dry-fried tofu cubes with a Japanese-inspired sauce, over a bed of watercress, celery, cashews, scallions, and a garlic-gingery dressing. It's super fresh, but also full of umami (mmm... umami!) and full of abundant sources of zing. Mr. VE&T is always asking me to make this, and this week I finally did! :)

Nice one, mr. VE&T. Lucky him, a whole week's worth of personalized meals! I never buy watercress, not knowing what to serve it with but I always love it when I try it.
