Panino Time!

I sure do love my panino press. It's so fun. Somehow, it has magical powers to transform regular sandwiches into Super Sandwiches!


Last week, we kicked off Panino Season with a great Tempeh Reuben. I combined recipes from Vegan Diner and Real Food Daily. I used the marinated tempeh recipe from RFD, for the first time, and really loved it! The tempeh was really great and thick and hearty - really a nice substantial element in the sandwich. Together with some delicious sauerkraut, secret sauce from Vegan Diner, and fresh rye bread - we had some really tasty sandwiches! Also, super filling!
 


Then, on Father's Day, we had my parents over for lunch. As it turned out, Mr. Vegan Eats & Treats was totally incapacitated with the flu - so my parents and I took our lunch into the backyard... so Mr. VE&T could sleep and my parents could avoid being exposed to the Power Germs. I made a batch of Susan V.'s delicious White Bean Pesto, and then grilled up a bunch of marinated veggies (eggplants, red onions, zucchini, and green onions). It was all put together on some fresh rolls with a big handful of fresh basil chiffonade... and ready for the panino press!
 


Here's how they looked after the pressing! Toasty, crispy on the outside, and all the magical flavors blended together. The only element that wasn't really a hit were the grilled green onions. They were too stringy for the sandwich experience. It was kind of an experiment, and not one I would do again. Still, you never know if you don't try!

    oh my gosh those sandwiches look so delicious! yOu're right, a panino press transforms a sammie from a 5 to a 10!

  2. Okay, you have now put my laziness to shame. I actually forgot that I had a panini press too, until I read your post... It's just been sitting in the closet for so long, under and behind other equipment, that it's like it's not even there. Seriously inspired by these incredible sandwiches though- I'm resolving right now to put my press to use this summer! Sounds like a great alternative to heating up the oven or stove anyway.

  3. Panini are the best, and I love what you put in both of those sandwiches. Seriously! I really need to whip out my seitan reuben recipe one of these days.
