Our Vegan Wedding: The Night Before!

Hi Everyone! 
We're back from our min-honeymoon and we are now officially Mr & Mrs Vegan Eats & Treats! 

Don't worry, I won't go on and on about the wedding details - I'll stick to the food! We had some really special friends and relatives coming to our wedding (duh!), so we wanted to be sure that we had plenty of opportunities to visit with them. So, the night before our wedding, my parents hosted a really great dinner over at their house. I really wanted our actual wedding to be 100% vegan, but Mr. VE&T isn't a vegan (and most people aren't), so our auxiliary events were mostly vegan, but not 100%. Obviously, though, I'll only show you the good parts! ha ha!

Together with my mom and my two aunts, we had a great time planning out a menu (and going to Costco to get stuff!) After much discussion, we settled on a Taco Bar dinner. This idea has the ability to please pretty much everyone in our complicated family: vegans, meaties, gluten-freebies, picky youngsters, soy-freebies, and so on. As you can see, my mom did a really great job putting it all together. There were two kinds of soft tortillas, plus crunchy taco shells, and then a million good things to put in your taco. (Including a whole Hot Sauce Bar that I failed to get a good picture of).

She put out all sorts of condiments - bean salad, green salsa, pico de gallo, guacamole, green onions, black olives... Plus there was chopped lettuce, cabbage, tomatoes, and more. It was rad!

Here's what I settled upon: two soft tacos, a big scoop of refries, and some bean salad. All the chopped tomatoes were from my garden! My mom made a vegan bean filling for the veg*ns, and then a non-vegan filling for the others. It was really good... but those refries were super yummy! Also, my mom's bean salad is really super great. Maybe I'll get the recipe from her and share it with you all!

  7. Happy wedding! A taco bar was such an inspired idea for a pre-wedding dinner. It really does cover all the food bases, doesn't it? I'm thinking it would be a great idea for my next get-together — so many of the dishes could be made ahead and leave the dinner-day nice and relaxed. Looking forward to the wedding spread!

  18. I am of the opinion that taco bars are the BEST for a crowd! We did a nacho bar for a football gathering last year and it was perfect for everyone from me to the kids to the pickiest meat eaters :)
