MoFo 7: Pad Thai Salad with Tofu

 Last night, I was looking for something quick, easy, and yummy! Ever since the glorious excess of our wedding day/s, Mr. VE&T and I have been watching our diets and trying to shed a few pounds. So, I've been cooking a lot from Isa's book "Appetite for Reduction." I love this book so much. I love how quickly the recipes come together, I love having the nutritional information for the recipes, and I love how few duds there are in this book. 


So, last night I made two dishes I hadn't ever made before. First up was the Pad Thai Salad. We both loved it. Easy, quick, and yummy: meeting all my requirements! I loved the warm flavors of the dressing, the crunchy sprouts, and the peanuts! I have been thinking about peanuts a lot lately. Mr. VE&T was so stoked because there were raw red onions in the salad, which is his favorite thing ever. I even gave him most of mine, because I am not such a fan of the raw onion. 

This is how I feel for hours, after eating raw onions. Dragon breath!


Also, I made the Thai Red Curry Tofu. I wanted a protein blast with the salad, and was so happy to realize that I already had an open jar of Thai red curry paste in my fridge. It was meant to be! I thought I would put the tofus in the salad, but I ended up eating them separately. They were a great combo, and it was a perfect dinner: fresh, light but filling, healthy, and not too excessive ... leaving us with room to bust into our freezer full with leftover cookies from our wedding... and each have a cookie for dessert!

  3. both of these look seriously delicious! and i agree about raw onions, totally not my thing! i feel like my boyfriend is a onion dragon because i always give him all my onions too!

  4. I love that red Thai tofu! I make it (and the hoisin mustard tofu) all the time. It's the perfect dish for a weeknight after a long day at work.

  5. I just discovered your blog thanks to Sunday's VeganMOFO round up, and I was so excited to see your drawings! I decided to do drawings as my MOFO theme this year, and I'm happy I'm not alone. Yours are far more professional, but I'm still glad to see another sketcher. (Your oil paintings are amazing too -- what a powerful message.)

  6. These are two dishes I am yet to make from AFR and I so know how you feel after eating raw onions, I try to avoid putting my face up too close to anyone else's!

  8. I have this book from the library, so I'll have to look into the Pad Thai Salad, but I agree with you about the onions. I like a little and beyond that I'm afraid to talk to anyone in person for awhile...

  9. I have almost made that salad so many times but never have. Actually I think it's the ONLY salad in AFR I haven't made even once. Your post is making me wonder why!

    And I agree on raw onion! It's one of the only foods I don't like, in part 'cuz of the fire breath.

    I am not a fan of raw onions either - EVER! I will mail Mr. VE&T all my raw onions and he can live blissfully at each meal!
