Zesty Orange Mojo Tofu!


I really loved baked tofu - it's delicious, easy, packed with protein, and full of flavor. I love making a big batch so that I have it to nibble on when I want a healthy and filling snack from the fridge. For me, cold baked tofu from the fridge is every bit as good as hot baked tofu fresh from the oven. Like cold pizza!

Sometimes, you just gotta get your mojo going! One of my all-time favorite baked tofu recipes is the Zesty Orange Mojo Tofu from Viva Vegan, by Terry Hope Romero. It doesn't require marinating in advance, which makes it even easier. Better yet, while the tofus bake on one side, you have time to mix together the marinade. Then you flip the tofus, pour on the marinade, and bake a bit longer.



It takes about an hour total, but most of that time is just the tofus doing their magic in the oven while you are off reading a book or snuggling your cat. As promised, this tofu recipe is quite zesty indeed - it's packed full with flavor - so I just served it with a giant mound of broccoli and some super delicious green beans from the farmers market.

    Hiya, glad to have found your blog. I love the chile cornmeal crusted tofu from veganomican baked, then served with freshly squeezed lime juice x.

  2. Oh! We have been on a baked tofu bender here as well! I've been keeping two blocks of pressed tofu in marinade in the fridge, to cook off daily. Once I bake it, we tear through it.

    We like ours very well baked so it's super chewy.

    I'm about to post the recipe I've been using, so I laughed when I saw your post. My pics are already snapped and everything. My favorite lately is tofu in a smoky beet juice. Once the tofu is gone, the beets are marinated and delicious in collard wraps!!

    1. yeah! cold baked tofu is the vegan's version of cold pizza! Of course, we can have cold pizza too... but you know what I mean. :)

  4. I LOVE tofu! Never thought of marinating it in orange juice, I normally bake it with Marmite/soy sauce/balsamic vinegar with garlic...yum! Wish I had a cat to snuggle, unfortunately we can't have cats in our flat, otherwise I would have lots of rescued ones!

  5. I love baked tofu & I love that recipe. I always have baked tofu in the fridge to nibble on & you're so right about it being yummy cold just like pizza! My go to baked tofu recipe is the one from AFR but recently I've been loving the basic one from Vegan Eats World.

  6. That's a great recipe! I've made it several times. My favorite baked tofu from Viva Vegan is the Latin Baked Tofu. I add hot sauce to the marinade for extra spiciness. I totally agree that cold tofu is every bit as good as hot out of the oven. In fact, I love cold tofu more! I like how it becomes dense and toothsome after chilling in the refrigerator.

    The impatient person in me likes that with both the orange mojo and Latin Baked that you can put it in the oven right away while you make the marinade. It's like multi-tasking, and there's no extra marinating time in the refrigerator, which makes it quick and convenient.

    I started making my own lemon rosemary tofu that way. I used to marinate it ahead of time, but now I never do. I just put some tamari and olive oil into a glass dish with sliced tofu and bake at 400 degrees. While it's baking for 20 minutes, I juice one or two lemons. I pour the juice on with a few pinches of rosemary and bake for 20 minutes more. It's so easy and good with everything! And of course, it's best cold out of the fridge!

    1. so cool! I haven't tried a single one of the recipes that everyone is suggesting. It's so cool. Such a wide world of baked tofu to explore! Latin Baked Tofu sounds awesome. And I totally agree with you about the phase one baking while you make the marinade. It's a revelation for impatient, tofu-craving vegans like us! And, also, I think I prefer baked tofu cold too. It's so much chewier. MmmmMmmm!

  8. Oooh, I love that book but I haven't made this tofu from it yet. I think I just end up re-making the basic Latin tofu over and over, ha ha. :) I love orange flavor in savory dishes, so I might need to concoct something like this!

  9. My favorite is from kittee's pakupaku. I think it's called "oven-fried tofu," but at my house we call them tofu cuties. A friend recently called it vegan crack. Ha! They make an unbelievable sandwich and are great on a salad (or in the rain or on a train!).
