Tofuevos Of My Dreams!!!

I really love a good, simple tofu scramble. I also love scrambles with veggies and salsa and other good things... but sometimes I just want some yummy tofu scrambled up in a tasty way and nothing else. But somehow, I've never had a lot of success making my own basic tofu scramble. My attempts always come out too bland or weirdly over-seasoned in one direction or another. I'm really not proud of the fact that I can't even figure out how make a reliably tasty scramble.

But, luckily for me, I've struck pay dirt. About 7-8 months ago, I bookmarked this amazing recipe for Tofuevos from Vegicano. If you don't follow Vegicano on Instragram or on his blog - go check him out! So many amazing recipes and drool-worthy pictures!!

Why did it take me so darned long to finally make this recipe?! Since making it the first time, I have already made this scramble at least 3 times. It's so quick and easy that I can even make it for myself in the morning. I always wake up Ready To Eat, so my breakfast has to be speedy!

It comes together in just a couple minutes and the result is so crazy delicious. Simple, quick, and with a great blast of flavor. Lately I have been exploring and enjoying the world of savory breakfasts. Sometimes I just heat up the leftovers from last night's dinner... but now with Tofuevos, I have a new favorite. For me, the recipe makes two servings - enough to have one serving right away and save some for breakfast the next day.

I feel like I've been looking for this recipe for so long! So glad I finally found it!

  3. I dig Vegicano but hadn't caught that scramble, thanks for the tip off. I could totally use a savory morning bowl other than my usual oats -thanks :) I always tend to over spice, more is not always better!

  4. Amey--Thank you, as Mihl said, for pointing us to the Vegicano blog: love the recipes, and Love this one, which I managed to pull off making this morning--on a weekday work day! This tofu scramble recipe is now, officially, my favourite tofu scramble recipe. Muchisimas gracias.

  5. Thanks for the Vegicano heads up! Following him on IG now. That scramble recipe looks so great and so similar to one of the ones Nick and I made when we were trying to create the noochy scram from Bouldin Creek cafe, ours has no veganaise and the nooch and soy sauce amounts are switched. I'm totally excited to give the recipe a whirl!

  6. Tofu scramble is really the only way I like to eat tofu - I can't stand big chunks of it in stir-fry's and such. This sounds like a great recipe, I'm going to give it a go for breakfast tomorrow!
