I really love a good, simple tofu scramble. I also love scrambles with veggies and salsa and other good things... but sometimes I just want some yummy tofu scrambled up in a tasty way and nothing else. But somehow, I've never had a lot of success making my own basic tofu scramble. My attempts always come out too bland or weirdly over-seasoned in one direction or another. I'm really not proud of the fact that I can't even figure out how make a reliably tasty scramble.

Why did it take me so darned long to finally make this recipe?! Since making it the first time, I have already made this scramble at least 3 times. It's so quick and easy that I can even make it for myself in the morning. I always wake up Ready To Eat, so my breakfast has to be speedy!
It comes together in just a couple minutes and the result is so crazy delicious. Simple, quick, and with a great blast of flavor. Lately I have been exploring and enjoying the world of savory breakfasts. Sometimes I just heat up the leftovers from last night's dinner... but now with Tofuevos, I have a new favorite. For me, the recipe makes two servings - enough to have one serving right away and save some for breakfast the next day.
I feel like I've been looking for this recipe for so long! So glad I finally found it!
