Tostadas!

I saw this on someone else's blog (for the life of me I can't find the original post), and I was inspired to try it.
First, I put my tortillas in my little pyrex (1 at a time) and baked them for a few minutes until golden.
Then I put in a layer of refries. I used the non-fat veggie refries from Bearitos. I added in some fresh salsa and a big spoonful of cumin and cooked it up warm.

Then some faux-spanish rice. I had some old rice in the fridge, I heated it up in the pan with a little water, some more fresh salsa, some garlic powder (too lazy to mince another clove of garlic), and some paprika... yummy & spicy!
Next, I added some sauteed veggies. These had a bit of olive oil, garlic, red onions, broccoli, & carrots.
Then some fresh cabbage
and some fresh lettuce
Not pictured: a big mess of fresh salsa, and happily stuffed belly!

  1. Looks delish! And I think maybe it was Vivicious Vegan who posted about these recently? I just seem to remember because it caught my eye then as well. These definitely have a place on my agenda now.

  4. Mmm, looks good. Did you brush the tortilla with oil, or bake it as is? What temp did you bake at (I'm guessing the usual 350-400 range)?

    Hi Lisa,
    I didn't brush them with oil, because they're already a little bit fatty as is. Also, I baked them at 350. I just kept peeking in to see how they were doing. I would say that it was about 5-7 minutes each?

    Ah yes! That was me. It's such an easy and delicious dinner. I usually bake mine draped over an empty and washed 28 oz tin can (like the kind tomatoes come in). That way I can bake more than one at a time. Since we recycle everything we always seem to have tin cans lying around but you could always just keep a few empties stashed away for this meal. You've inspired me to try the no-knead bread. My first go-around is with King Arthur's White Whole Wheat Flour. I added a Tbsp of vital wheat gluten because I was a little nervous about the whole wheat. I'll let you know how it turns out tomorrow.
