Holy Abundance Batman! We have SO MANY cherry tomatoes. It's like an Olympic sport trying to eat them all while having as few as possible go to waste. Things are slowing down out there on the vine, but we've still got a lot left to eat!
One easy classic is just a gigantic mess of cherry tomatoes, olive oil, fresh basil, garlic and salt - served over pasta. Mmmm. Clear, summery flavors. I've spent some amount of time in Tuscany, Italy, and one of the main food lessons I learned there was the joy of uncomplicated foods made with the highest quality ingredients. Sometimes just a few ingredients that are really allowed to shine make the best meal in the world.
In fact, here's a case in point. I've been reading the beautiful "101 Cookbooks" blog for a while now, but I'd never actually gotten around to trying any of the recipes. But, when I saw her TLT Sandwiches (using loads of cherry tomatoes) I decided to pounce! The sandwich has marinated tempeh, roasted cherry tomatoes, and avocado. Aren't they beautiful? Unfortunately, in the end, they were just okay. We ate them up, but we didn't actually love them that much. The cherry tomatoes and the tempeh each had a really strong flavor, and they didn't really go so harmoniously together.
too bad. I'll still give 101 Cookbooks another try sometime.

ReplyDeleteGive 101 cookbooks recipes another try. My favorite veggie burger recipe is from there also some other great recipes (a lot are non vegan though). I am trying to veganize recipes and not always very successful.
On a different blog, Chez Pim (incidentally the blogger lives in SC!) there is a great recipe for vegan (if you use agar agar) pumpkin panna cotta which is great (http://chezpim.typepad.com/blogs/2007/10/pumpkin-and-coc.html).

we've been eating the tomatoes right off the plants as they ripen. I don't think any made it into any completed dishes.

ReplyDeleteYea for cherry tomatoes! I plan on picking up some tomorrow morning at the farmers market. My favorite farmer had a bunch last week and promised to have even more on Saturday.
