VeganMoFo: Waffles for Dinner!

Every once in a while we get lucky and my little nephew CW spends the night. Recently I promised him the special treat of Breakfast For Dinner when he was over.

These pictures aren't so beautiful... but we had a great time. I made the "Pumpkin Waffles" from "Vegan With a Vengeance" and also the basic waffles from "Joy of Cooking" (veganized, of course). You can see the lighter, white flour Joy of Cooking waffle, and the hearty, autumny-spiced pumpkin waffles on the bottom. Since I was cooking for a little guy with a very limited palette, I halved all the spices on the pumpkin waffles. I really loved them - and I loved how many it made. I froze the left overs and enjoyed them toasted for a few days.

I also made the Tempeh and White Bean Patties from VWaV for the first time. Mmm. I really loved the way the flavor and texture of these patties. And so easy! See our cute plate? It's a Makit Plate that little CW drew a couple of years ago. I was gobbling up the sausages, but I was the only one. Musty probably liked them, but not as much as he liked the waffles. So that was where he focused his attention. CW took a tiny taste and rejected them. I guess I wasnt' too surprised though, tempeh and white beans are very far from his daily diet. But I'm workin' on him!

    I love those pumpkin waffles. I made the pear-ginger waffles this weekend, and they were good, but not as good as the pumpkin ones.

    Hooray for breakfast for dinner! Waffles are good at any time of the day. I'll have to try those pumpkin waffles soon!

  5. Those patties were the first thing I made from VwaV. They were damn good! But I've yet to try the pumpkin waffles. I meant to make them last fall and let it pass me by. Now that we're in pumpkin season again, I shall.
