Veganomicon Week! aka Kale Week!

Last week, I made a few yummy dishes from Veganomicon - all of which had the world's most mighty vegetable: Super Kale!

Potato-Kale Enchiladas. OMG! Have you made these yet? Well, first of all, you better have you some free time, because these babies take a long while. But they are most definitely worth it! Mmmm... roasting the peppers, making the enchilada sauce, the crunchy pepitas in the filling... totally delish. I made these for Family Dinner, and they were a huge hit. Ya know, it was hard for me to get a very lovely photo, but I can assure you, these enchiladas are superb!

Baked Potato & Kale Soup. Another potato-kale combo! But with a very different flair. Most of all I freaked out over the garlicky potato wedge croutons. I liked the soup - warm and filling and healthy... but the baked potato croutons really "kicked it up a notch," as some would say. Next time I will make an extra batch of the croutons.

Lastly, Brussel Sprouts and Quinoa with Seitan (or something like that!). This tasty dish has brussels, kale, shallots, sundried tomatoes... I served it over rice instead of quinoa because Musty is a fool for rice, and every once in a while I feel like being nice to him. I used Julie Hasson sausages for the seitan, and that was a great idea. Last time I made this, the seitan was a little mooshy, so this time, I stir fried the seitan at the very end and added it. Much better!

    Wow potato and kale - yum! I love kale. And I've been dying to try those enchiladas. Perhaps there can be some way to reduce the time slaving in the kitchen... :)

  2. Okay, all the pictures look delicious, but that baked potato and kale soup sounds AMAZING! Such a great idea.

    Those enchiladas do sound like a lot of work but it's good to hear that they are worth it!

  7. every kale recipe I've ever tried from the Vcon has been absolutely rocked out, so um YES I should get on the baked potato soup I think! Still haven't done that one, and you make it look really scrumptious. :p

  8. Those enchiladas are AMAZING but I have to wait until I have a lot of extra time on my hands to make them. Still haven't made that soup either, but it looks like I should really give it a shot!

    I made that potato soup recently too and it was awesome! And you're right about the croutons. The enchiladas have been on my list ever since the book came out but time is not something I have in abundance now.

    I've never even seen the brussels sprouts recipe though - might have to try that one.

  11. Everyone is going crazy for kale these days, so I guess I need to try it too! The brussels sprouts and seitan look awesome. And I've been meaning to try those potato croutons forever!

    Oh yum, this is perfect as I have been looking for more ideas to use up all of the kale and other garden greens. I will pull out my book and mark these. Though (boo hoo) I will have to buy some brussels as the once I planted got seriously munched by bugs this winter.

    I like the juxtaposition of the photos of super-healthy kale and sugary king cakes currently on your blog :-)
