VeganMoFo 8: Hey Mister!

Meet Mr. Vegan Eats & Treats!

I thought I'd introduce you to my behind-the-scenes partner in crime... the friendly fellow who eats all these culinary creations. Mr. VE&Ts loves to eat. This is an old pic is from our trip to Pondicherry, in Southern India... but you can see that it really captures his enthusiasm! Mr. VE&Ts also has an enormous mouth. I am not kidding. This is helpful for eating lots of food.

When I first moved in with Mr. VE&Ts, I had been living alone and cooking for one. I would cook up some lasagna and think "Oh good, we can have this for leftovers for the next couple nights." Wishful Thinking! No. What I soon learned was that there would be no leftovers. You see, if Mr. VE&Ts likes what I made, he will eat the whole. entire. thing. If he doesn't particularly like it, he will probably manage to eat it with good humor once, but he will not finish it all, and he will not eat it the next day. This makes cooking for Mr. VE&Ts a little dicey, you know? Cuz it does happen that I'll make some *enormous* batch of something, and he'll declare that he doesn't particularly like it, and then I'll be eating that damn so-so dish for days! ha ha.

However, Mr. VE&Ts is truly a delightful audience for my cooking efforts. When he enjoys something, he'll just go on and on about how great it is until I feel positively like the Queen of the Vegan Kitchen. Mr. VE&Ts is decidedly not vegan, but he is my most enthusiastic booster, and always supports my creative adventures in the kitchen - and very happily enjoys my cooking.

So, as a sign of my love & appreciation, this week I decided to let Mr. Vegan Eats & Treats choose our meals for 7 days in a row!! Tonight's selection is one of his favorites... which he often asks for at the most random times. He calls it "Tofu Watercress Salad," but it's technically called "Asian Chicken Salad with Crispy Wonton Strips" from Healthy Hedonist. Which is funny, because I use the glazed tofu instead of chicken, and leave off the fried wonton strips entirely. But seriously, this salad is totally freaking amazing, and takes about 20 minutes to make. This salad alone is worth the price of that book, imho.

I leave you with one of my favorite pictures of Mr.VE&Ts. For so many reasons... I just cannot get enough of this picture. It was also taken on our trip to Southern India... it must have been about 105 degrees when I took this picture, and poor Mr. VE&Ts was losing about 2 gallons of water per minute. He was so exhausted, but still had his sense of humor! This pic totally cracks me up and makes me love him all the more.

  3. Awww what a sweet post! I have one of those supporters, too. You know, the kind that will eat an entire casserole dish of vegan enchiladas if I don't intervene and save some for later. They are great, aren't they?

  6. Aww I love this post! You are very lucky to have such an enthusiastic recipe tester/consumer - I have one as well, and it makes my kitchen time so much more fun! And I love that picture with the rock too :D

  8. My husband is vegan but he humors all of my cooking adventures as much as your man does :-) See I am always trying to make things healthier and healthier- sometimes it just doesn't work out- he will eat it once but never again :-)
