Banana Bread Love

Well, geez. We had a bit of a rough weekend. I had so many great things on my to-do list... but then Mr. Vegan Eats & Treats was seized by a horrible flu which left him moaning and groaning and coughing on the sofa all day - and requiring lots of TLC. As if that wasn't enough, then Snoopy suddenly had a recurrence of back pain - which required a trip to the emergency vet. So, I had to dash off and leave an incapacitated Mr. VE&T and spent 1 1/2 hours at the vet fretting over little Snoopy. Sigh. It was a tough way to spend the day. I didn't even walk our other dogs until 7:30, and finally made dinner for myself at 10 pm!
 
Thank goodness, everyone is feeling a little better today. Mr. VE&T is still spending the day on the sofa - but at least he had the energy to get dressed and go out for a little time outside, and is generally feeling much better. And as for Snoopy, he is confined to being on leash 24-hours a day for one whole week. As you can see, he seems more or less okay with it. I had to buy him a harness (so that we won't pull on his neck, which is where the pain was)... and now he is constantly attached to me. We even sleep with his little harness on and his leash tied around my wrist - so that he can't jump off the bed in the middle of the night. He's got some good drugs and generally seems to be in MUCH less pain today. Phew!

 

So, finally... today I am getting around to some of the things I didn't get to do over the weekend. I never thought I'd be so stoked for a Monday! One thing I've been meaning to do for a while is make banana bread! I love the "Lower Fat Banana Bread" recipe from Veganomicon. I use walnuts instead of chocolate chips, and use half whole wheat pastry flour and half all-purpose flour. I had 3 big frozen bananas to use up, so I made a regular-sized loaf and this cute little mini-loaf. Nothing like a nice little baked treat for some comfort food.

 


By the way... My usual banana bread system is that whenever I have a banana that goes beyond the point of yumminess, I just pop it in the freezer until I have a couple of them - and then I made some banana bread! Over the years, I accidentally stumbled across this delightfully gross and fun way to get my frozen bananas into the bowl. You have to freeze the bananas, then thaw them fully, in order for this system to work. It is great fun. Try it!

  2. Oh man! Poor Snoopy, he looks so adorable and sad all at once. And poor Mr. VE&T too, of course. Also thanks for your pictorial guide to peeling frozen bananas - I never thought about doing it like that before, and I even knew the thing about the monkeys! I've even got some decrepit bananas all ready to go. :)

    Also, no freakin' way about the monkeys. THEY OPEN THE WRONG SIDE?!
