Yummy Shepherd's Pie


Well, I know it's not really all that summery, but sometimes we have foggy nights in Santa Cruz, and I am in the mood for something warm and hearty. So, I made the Upside-down Lentil Shepherd's Pie from Appetite for Reduction. It's basically a rich lentil-y stew with a big side of "Caulipots" on the side (half mashed potatoes, half mashed cauliflower). Sooo good. I'd never made this before, but we both really loved it, so I'll definitely make it again.

I love meals like this - a one-bowl experience that has it all: veggies, lentils, starches, and loads of flavor! Plus, it made great leftovers the next day. :)

  3. I was just thinking of making cauliflower mash. I'll have to try a little of both cauliflower and potatotoes. Thanks for the tip!

  5. Oh, I haven't tried this one from AFR yet, but it sounds right up my alley! It also looks very doable for a weeknight. One thing I really like about AFR is that most of the recipes take 30 minutes or less. Great for any-day use!

  7. Oh yum, I love meals like that too. The caulipots are a staple in my house and I really need to make the upside down shepherds pie soon, it'll be perfect for the great British summer we're having!
