We were brainstorming the other night, about french toast, and Mr. Vegan Eats & Treats came up with this excellent idea: Peanut Butter & Banana French Toast!
Here's what I did:
Prepare your french toast batter (I used the fronch toast from Vegan with a Vengeance ; except I just used 1 cup of regular soy milk). Carefully dip the whole sandwich into the batter on both sides. Place the battered sandwiches onto a lightly oiled pan or panino press, and cook until golden on both sides.
We had ours with maple syrup, and the whole thing was just outrageously delicious. Also, thanks to the whole grain bread, and the peanut butter, it wasn't a crazy sugary gut bomb. Definitely an experiment I'll repeat! (next time, we might try a PB&J french toast sandwich!)

Take two pieces of wheat bread, and put about a tablespoon or so of peanut butter on each one. Cut up half a banana in little slices and spread them on top of the peanut butter. You have to put the PB on both sides, so that it will hold on to the banana slices! Press it closed and make a sandwich. Repeat for sandwich #2.

Whenever we eat at the coffee table (which is most of the time), Snoopy sits right under Mr. Vegan Eats & Treats' feet - and stares down at the floor. I guess Mr. VE&T is a much messier eater than I am, and Snoopy just stares down with laser-like focus - waiting for tasty morsels to land from above. It's pretty hilarious. He's not the sharpest intellect in the bunch, but that Snoops is seriously food motivated.

ReplyDeleteaw, snoops! that drawing kills. i think i've ever had french toast once it my life and i was little and it was eggy, and i never wanted to eat it again for the rest of my life. oh the formative years.
