The day after the wedding, we had another festivity - a very casual bagel breakfast. Mostly it was just a chance to have more visiting time with friends and family and out of town guests. Plus, we had the brunch party at my aunt's house - which used to be my grandparents' house. Just being there, with everyone together, made me get all teary eyed - and made the whole thing feel extra meaningful.
As you can see, my aunt put together a real awesome spread. There were tons of bagels, two kinds of jam, guacamole, Earth Balance, hummus, tomatoes & avocados (and a couple non-vegan toppings too).
Mmm. Bagels.
We ordered a big mess of bagels in all different flavors from our local bagel spot. Luckily, there were some bagels leftover too - so now we have a good bagel stash in our freezer... just waiting for the next moment when someone needs a carbo loading extravaganza!
I didn't want my gluten-free friends to be sad or feel left out, so I made some gluten free Blueberry Cinnamon Scones (recipe here). My pal Kittee suggested this recipe, and they came out really great. I made them about a week ahead of time, froze them, and then defrosted them on that morning. Also, that morning, I made a lemony glaze to top them with, which was really nice. These were a big hit - and were totally gone by the end of the day. We made sure all the gluten-free folks had what they wanted before letting other people try them. :)
Of course there was fruit too! Grapes, melons, strawberries, figs, and sliced up stone fruits. Sooooo good. Plus, we gathered together all the family toasters so that no one would be standing in line to toast their bagel. It worked out perfectly. Personally, I prefer my bagels toasted. What bread product isn't improved with a little toasty time??
Here's my breakfast: a toasted whole wheat garlic bagel with half hummus and half Earth Balance - plus a ton of fruit. If I'm being honest, I'd have to admit that this was actually just my first plate of food... I definitely went back for more!
flowers!
As you can see, not only did we have a super fun and romantic wedding weekend - but we also had a super yummy weekend! It was truly a great time!
