Or at least, Yummy Breakfast of Regular People Who Are Not Really Champions.
Ever since I found this recipe in a recent issue of Yoga Journal (of all the places!), I have been making it regularly and really enjoying it.
Oatmeal Porridge
Naturally, I've tweaked the recipe a little... so this is my way of making it:
1/2 c. almond or soy milk
1/2 c. water
1/4 c. rolled oats
2 scant Tbsp shredded coconut
pinch of cinnamon
maple syrup or agave to taste (optional)
Combine the milk and water and oats and coconut in a little pot. Bring to a gentle boil, and then turn the heat down. Simmer 3-4 minutes. 3 minutes for a more chewy oatmeal, 4 minutes for a little more mushy oatmeal. Remove from heat. Stir in cinnamon and sweetener. Eat with happy morning vibes.
As the name implies, this is liquidy way of eating oatmeal, and I was skeptical, since I prefer my oatmeal with a little bite. However, it's actually quite nice and I have really taken to this simple, nourishing, and filling way to start my day. Alongside a piece of fruit and a toasty beverage, it's quite lovely indeed.
