I'm not sure why, but it always seems like things taste even more especially good when they're from your own garden... It's some combination of the actual super-freshness of the food, along with a dose of self-satisfaction from having grown something so tasty "yourself." Not that I actually do any of the work mind you... thanks, Mother Nature!

VeganMoFo 2: Baked Tofu & Pesto Sammies
Mmmmmmm... a perfect light dinner at the end of a hot day. I made up these tasty sandwiches with pesto, fresh basil leaves, baked Italian-style tofu, and fresh tomatoes. The pesto, basil, and tomatoes were all from our humble garden. These sandwiches were super delicious, and truth be told, we both went back for seconds. Mmmm.

That sandwich looks perfect, one of my favorites. I'm with you on the goodies from your own garden always tasting the best.
ReplyDeleteYum! Did you bake the tofu yourself, and if so, what herbs and spices did you use?
ReplyDeleteLove basil-y tofu sandwiches! I never have the foresight to bake up a bunch of tofu, though. I really need to start - it's so easy to grab from the fridge and have it hot or cold!
ReplyDelete*sigh* I miss tofu. Yep, stuff that you grow yourself tastes WAY better! Even though all I can grow are herbs by our one decent window.
ReplyDeleteoh yum oh yum can i have some?
ReplyDeleteThis makes me miss tofu too! That looks like one delicious sammige and props to you for having such nice garden produce.
ReplyDeleteThat looks amazing and is totally giving me cravings. How fantastic that so much of it came from your own garden!
ReplyDeleteMmm, recipe please?!? And for the hummus you made, too :-)
ReplyDeleteIs the baked italian tofu the recipe from the veganomicon? If so, why have I not made it yet?! It looks ridiculously tasty in those sandwiches! :) -Eve

ReplyDeleteMy 14 year old, Livy, just plopped down on the couch beside...took one look at the computer screen and swooned...saying..."oh, now *that* looks good!"
