VeganMoFo 2: Baked Tofu & Pesto Sammies

Mmmmmmm... a perfect light dinner at the end of a hot day. I made up these tasty sandwiches with pesto, fresh basil leaves, baked Italian-style tofu, and fresh tomatoes. The pesto, basil, and tomatoes were all from our humble garden. These sandwiches were super delicious, and truth be told, we both went back for seconds. Mmmm.

I'm not sure why, but it always seems like things taste even more especially good when they're from your own garden... It's some combination of the actual super-freshness of the food, along with a dose of self-satisfaction from having grown something so tasty "yourself." Not that I actually do any of the work mind you... thanks, Mother Nature!

    Love basil-y tofu sandwiches! I never have the foresight to bake up a bunch of tofu, though. I really need to start - it's so easy to grab from the fridge and have it hot or cold!

  4. *sigh* I miss tofu. Yep, stuff that you grow yourself tastes WAY better! Even though all I can grow are herbs by our one decent window.

    Is the baked italian tofu the recipe from the veganomicon? If so, why have I not made it yet?! It looks ridiculously tasty in those sandwiches! :) -Eve
