Super Soups!

For a while now, I've been on a real soupy-stewy kick. Mostly, ever since Christmas or so, we've just been eating soup. Of course, I was gone for a couple of weeks there (Munich re-cap coming soon!)... but even with jet lag beating me down, I jumped right back in the kitchen and got back to my souply duties.

Here a few highlights... though many more soups have come and gone!

First off, one of my favorite soups of All Time: The ruby-red Borscht from Voluptuous Vegan. Love Love Love Love Love. Beans, greens, veggies, dill, chunky goodness, and all topped with silken-tofu-dill cream. SO good.

Caldo Verde with Crumbled Tempeh, from Appetite for Reduction. Man, I really love this book. I've made so many delicious meals from it - hearty, healthy, and yummy. I love decadent feasts and naughty treats as much as the next person, but most of the time, I just like to eat healthy and wholesome food.

My mom's Split Pea Soup recipe, with some Smoky Soy Curls from Vegan Diner. GREAT COMBO.

Mushroom & Cannellini Paprikas with Scarlet Barley - both recipes from Appetite for Reduction. Not technically soup.

Hottie Black-eyed Peas & Greens, served alongside some Ginger-Mashed Sweet Potatoes & Apples... again, both from AfR. That sweet potato business is also really good for breakfast! Again, not soup. But full of beans and greens and bright-orange goodness.

...and to top it all off, some beautiful kiwis from my friend's garden! Yum!!

  1. Those are some tasty looking eats and treats! I enjoy the Smoky Soy Curls with split pea soup sometimes too. They make for a great combination of tastes and textures. I tried the Hottie Black Eyed Peas and Greens for the first time on New Year's Day for good luck. I'm often hot and cold with black eyed peas, but this recipe really did it for me. It uses a lot of simple ingredients that make for a hearty, smoky flavor.
